Roasted Potatoes
red potatoes, cut in about 3/4 in. chunks
olive oil
Italian seasoning, or your favorite mix of salt, pepper, rosemary, oregano, basil, etc.
diced dried onion to taste
Mix all the ingredients in a gallon ziplock bag, making sure to shake to coat all the potatoes. Dump it all in a casserole dish, cover. Cook at 375 degrees for about an hour, until potatoes are tender. This is Andrew's family's go-to side dish. I usually add a bit of water to the bag, to keep the potatoes moist and so I don't need quite as much olive oil. All the amounts are just guesstimates, it's a really forgiving recipe to make for 2 people or 2 dozen.
