a can pork-n-beans
1 can red kidney beans
1 pound ground beef, browned and drained
1/2 C ketchup
1 C chopped onion
1 tsp dry mustard
3/4 C brown sugar
2 tsp vinegar
1 can mushrooms drained
fried crumbled bacon (if desired)
salt and pepper
Bake in a casserole dish350 degrees for 40 minutes or crock pot all day.

Banana Blueberry Pie
8 oz. cream cheese - softened
3/4 c. sugar
16 oz. (2 c.) whipped topping
4 bananas, sliced
2 pie shells, prepared (baked)
1 can blueberry pie filling
fresh blueberries and extra banana to make it look pretty
Beat cream cheese and sugar.
Fold in whipped topping and bananas.
Pour into shells.
Top with blueberry pie filling.
Refrigerate.
Garnish with the fresh stuff.

Shopping Report
Okay - shopping report - How am I doing? Well, not so good at staying in budget - but I feel great about my purchases! I spent $180 on Friday between Win-Co and Costco (not including dog food - anybody want to guess how many pounds of dog food it takes to feed over 300 pounds of dogs for 1 month? It's not a pretty sight!). I got everything off my list, a box of diapers, PLUS a ton that I hadn't budgeted for!
Additional items:
*Stove Top stuffing - $0.75/box!! I'm a sucker for it!
*a turkey - you can't beat $0.50/pound
*sweetened condensed milk - $0.99/can
*ice cream - $5.99/5 quarts
*10 cans of soup and a 12 each of cream of mushroom & cream of chicken soup! - Campbells at $.50/can
BUT!!!! As I passed Albertson's today, I think I read that they had the cream soups (Albie's brand) for only $0.29/can - so if you need to stock up, it's worth checking it out! Also, I think they said that Albie's has Green Giant (??) vegetables for only $0.39/can - that's as good as case lot prices, so I think that's a good deal, too.

Anyway - most of what I got I felt was a great buy and went well in my storage room - the best part is - I have SO many options for meals this month. It has already been tasty!
So, then today I got stuck waiting for Clay at a birthday party for 2 hours. I checked out JC Penny - nothing I couldn't live without.
Then I hit Wal-Mart.
All Halloween - 90% off!!!! What can I say, I am my Mother's daughter - I couldn't resist. I bought just a tiny bit of the yucky waxy chocolate candy to pacify the boys, but I did stock up on 20 costumes at $1-$2 each - maybe the boys will wear them, maybe they will just use them for dress up - but if any of you are in need of boys costumes size 0-12, just let me know - I've got quite a selection! So, I spent another $30 (also bought a ton of mouse killer supplies - I spied a nasty little varmin in my house today!)
Then, I went to Smith's -
bought a bag of 8 grapefruit for $1.50 - Travis thinks it's a waste, but I will LOVE them!
bought a bag of 20 roma tomatoes for $0.29/pound ($1.39 total) - can't lose
bought 8 gatorade & 2 hot chocolate boxes for $0.49/each - buy 10 get $5 off!
Also bought 2 sour cream and 2 cottage cheese for $0.88 each
And I broke down and bought a soda and 2 candy bars for $1.00 (buy the soda, get 2 candy bars for free).
Spent $16.
So, not such a good budget month - I've already spent a little over $220 and I still have the rest of the month to make it through for ward dinner, family dinners, Thanksgiving, and weekly milk, eggs, and bread. Hope I make it!

1st November Shopping Trip
All right - I already have to report my 1st shopping trip of the month (is somebody keeping track of my total for me???). Actually I sent Travis because I only leave my house about once a week - hate to waste gas $, you know? :)
He spent - $17.81 at Stokes on 1 big box of apples (there are our snacks for the month!) and 4 Pomegranates.
You know what they say . . . "An apple a day . . ."

November Menu & Shopping Challenge
Okay Skinner girls, lets see if we can become smarter shoppers -
I know I'm kind of a freak about this, but living on a limited income, I've tried to really budget my food spending. What I've come to realize is that with a little planning and storage, I can do pretty darn good for a family of 5 (soon to be 6 - yes this is the announcement for all you speculators. I've been in denial for quite a while - but can't ignore it now. Baby #4 is coming in March . . . or whenever he decides to get here) with not too much $$.
I try to keep my meals costing:
*Breakfast - 25 cents/person
*Lunch - 50 cents/person
*Supper - $1/person
**** That equals $8.75/day for my family ****
**** Average month of 30 days = $262.50 ****
Now I admit - I do cheat - I have a freezer full of meat and I do have a large storage room that I try to stock up on items when they are an excellent price, so I don't have to spend money on some things every month. But, in my monthly budget, I also try to pay for all of my diapers and (I used to until lately) buy my dog food with the same budget.
On lunches - my budget is kind of blown - Travis is at work - he usually takes lunch, but sometimes I send him to fend for himself. And Clay is at school. I usually pack him a lunch, too, but other times he eats hot lunch. So I try to make it all up other places. Also, myself and the two boys - we kind of rotate a few standards for lunch - leftovers, ramen (boys), can of soup, frozen pizza, hotdogs, macaroni and cheese, Spaghetti-o's - that's usually it for us, so I don't really "menu" that - I just kind of do whatever we feel like for the day.
I also only plan 20-25 days/month. There are usually so many days of leftovers, or going out, or visiting family, or other things that come up (ward dinners, parties, etc.) that it usually is sufficient. If not - that's what my storage room is for - Hamburger Helper, Baby! :)
As you can see, we don't eat out very often! :) And guess what - we don't really miss it. It is fun for special occasions to splurge and spoil ourselves - but usually we think, "I could have cooked that better or eaten more at home" and been more satisfied. But, we are kind of backwards and homebodies and in no way do we judge anybody else for their preferences . . .
Also, in my budget - I try very hard to keep my storage room stocked, so I try to add some good food storage to my list. Our RS President has challenged us to spend $20/week on food storage, but I have another little handout that helps me to add to my food storage on an average of $5/week - so being the cheap skate, guess which one I've gone with? :)

Chicken Rice Bowl
1 C. uncooked white rice
Herb Ox Chicken Boullion Cube
1/2 C. green pepper, chopped
1/4 C. onion, chopped (to taste, we obviously don't use quite this much)
1/2 C. thawed frozen corn
1/2 C. thawed frozen peas
1/2 lb. cooked chicken breast, cut into strips
2 tsp olive oil
1 tsp sage
1 tsp basil
salt and pepper to taste
Cook rice according to directions, but add boullion cube to water and dissolve in before adding rice. Meanwhile, in large skillet, saute green pepper and onion in olive oil for 2-3 minutes until crisp-tender. Stir in chicken, corn, peas, basil, and sage. Cook, uncovered, for 4-5 minutes on medium heat or until cooked through. Stir in rice, salt, and pepper, and serve.
This is a great quick meal when you want to make it seem you put in more effort than you did, since if you use frozen green peppers and dried or frozen chopped onions, there is absolutely no preparation (especially if you have leftover chicken).

The first time I made these, I just cut up 2 chicken breasts (which also go a long way when cut up in bite-sized pieces), but they were a huge hit, so now I at least double that. I mix my flour mixture in a cereal bowl - it doesn't take a lot. Andrew loves these, and since I tend to overcook them, he can pull a container out of the freezer and pop them in the microwave around lunchtime, take a small container of ranch, and they beat the heck out of McDonald's chicken nuggets, on taste as well as price. Great with homemade french fries, but cook them after, because if they burn the oil gets nasty.

2-3 sweet potatoes

Chili Sauce
8 qts of peeled tomatoes(mash them)
6 green peppers chopped
4 large onions chopped
I like to run the tomatoes, green peppers, and onions through the food processor
1 1/2 cup sugar
1 teaspoon cloves
2 teaspoon cinnamon
1/2 c vinegar
1/3 cup salt
Put all ingredients in a large heavy kettle. Boil for 2-3 hours or until thick. Stir often towards the end as it will being to stick to bottom of pan and may scorch. Pour in sterilized bottles and seal.
To serve , pour chili sauce over 1 8oz square of cream cheese and top with cooked shrimp. Serve with crakers. Chili sauce is very good with fried eggs too. Use any place you would use kechup

Separate eggs and beat egg whites until stiff. Beat egg yolks until thick and lemony, add sugar, salt and milk; then flour, soda and baking powder which have been sifted together. Fold in stiffly beaten egg whites. place small amount of fat in each cup of a Danish cake pan and fill 2/3 full of dough. Add a small spoonful of applesauce to each and top with dough to fill cup. Cook until bubbly on top and turn carefully with a fork. Serve with syrup.

Potatoe Cinnamon Rolls (Christy Mabey)
Boil pilled RED Potatoes in salted water. (Red Potatoes are more moist)
Save 1 C. potatoe water
Put Milk and Butter in potatoes and mash.
Use 3 C mashed potatoes
1 C potatoe water
1 C butter ( I can't believe it's not butter works the best for some reason)
1 C scalding milk
1 C sugar
3/4 Tbs salt
3 C. flour
3 T yeast (put on top of flour so not touching anything hot)
6 eggs
Mix together well. Then add...
10 C. flour
Mix for while in Bosh on high until it looks like smooth elastic, but still sticky.
Pour in greased bowl.
Let Raise until 3X the size
Pour out on floured counter. Stretch out into a long snake. Roll out snake until flat.
Coat with Butter, Sugar, Cinnamon, and raisins (optional)
Roll back up. Stretch out center. Cut with floss. Place on Cookie Sheet.
Let raise until 3X the size again.
Bake on 350 degrees for 18-20 minutes.

Bake at 350 for 35 minutes.

Tomato, Orange, Basil Salmon and Sauteed Green Beans
- 1 lb. salmon
- 1 tsp. olive oil
- salt & fresh ground black pepper, to taste
- 1-1/2 lbs. vine-ripened tomatoes (about 6 medium)
- 2 tsp. extra virgin olive oil
- 1 tsp. minced fresh garlic
- 1 medium orange
- 1/2 tsp. cornstarch
- 2 Tbs. finely sliced fresh basil leaves
- Fresh greenbeans, uncut, tips removed
- garlic cloves, minced
- EVOO
- salt and pepper to taste
- (I gave no measurements because everyone is different with portion size. Me..........I have a problem!!! This salmon recipe serves 4, so if I had to guestimate, I would say......maybe.....a pound or so of green beans.......and.......maybe.......2 or 3 garlic cloves???!!!???)
How to make it
- For Salmon:
- Preheat oven to 300°F
- Place Salmon, skin side down on ungreased baking sheet
- Brush top with olive oil and season with salt and pepper
- Bake for 20 to 30 minutes (or until flesh in thickest part appears just set, Salmon will continue to cook while standing-separate flesh with tip of paring knife to check)
- For Sauce:
- While Salmon bakes, cut tomatoes in half crosswise
- Squeeze out seeds and discard
- Set box grater in medium bowl
- Holding hand flat, rub cut side of each tomato half over coarse side of grater until only skin remains; discard skins
- In large skillet, over medium heat, heat oil; add garlic and stir until fragrant and just beginning to color, about 30 seconds
- Add tomatoes and simmer until most of watery portion has evaporated, about 10 minutes, stirring occasionally
- Grate 1 tsp. orange rind and squeeze 3 Tbsp. juice from orange
- Combine orange rind and juice with cornstarch, stirring until cornstarch is dissolved
- Add mixture to tomato sauce along with basil, stir briefly until sauce has returned to simmer
- Use metal spatula to remove portions of Salmon, leaving skin behind
- **Serve with sauce spooned on top**
**In a skillet, sautee greenbeans, over medium heat, in olive oil for a couple minutes, add minced garlic and season with salt. Sautee for another couple of minutes or until the greenbeans are crisp-tender. Remove from pan and season again lightly with salt and add fresh ground black pepper to taste.

1 small pkg of each Jello
Lime, Lemon, Cherry, Orange, Raspberry, Black Cherry
2 C sour cream
Boil each package (1 at a time) with 1 C water
Put 3/4 C of jello in glass cake pan
The other 1/4 C mix with 1/3 C sour cream and 2 Tbs cold water. Mix well and after the first layer of jello has set pour mixture on top. Continue this with the other 5 layers.

1 cube of butter, melt in large sauce pan. Add 1 package small marshmallows. Stir continuously until they are melted. Add rice crispies to desired amount (I like mine soft so I keep it pretty gooey) During the holidays add seasonal M&M's for color and the chocolate factor. Spread out on well greased cookie sheet. Let cool and serve.
Strawberry Dessert
Crush 1 1/2 package graham crackers. Mix with 1/4 C cube butter, and 1/4 C sugar. Put in bottom of pan. Mix 1 pkg cream cheese, 1 8 oz cool whip, 2 C powdered sugar. put on top of graham crackers. Top with strawberries and glaze.

1 head Napa Cabbage chopped ( Napa cabbage is light green/yellow and football shaped)

12 rhodes rolls, thawed and risen

Wingless Buffalo Wing Pizza
- 3/4 pound chicken breast cutlets
- Extra virgin olive oil (EVOO), for drizzling
- 2 teaspoons grill seasoning, such as McCormick brand Montreal Chicken Seasoning (eyeball it)
- 1 pizza dough, store-bought or from your favorite pizzeria
- Cornmeal or flour, to handle dough
- 2 tablespoons butter
- 1 tablespoon Worcestershire sauce (eyeball it)
- 2-3 tablespoons hot sauce, depending on how hot you like it
- 1/2 cup tomato sauce
- 1 cup shredded Monterey Jack cheese (I use a lot more)
- 1/2 cup blue cheese crumbles
- 3 scallions, thinly sliced
Preparation
Pre-heat the oven to 425°F. Pre-heat a grill pan to high.
Place the chicken on a plate. Drizzle EVOO over it and season with grill seasoning. When the grill is hot, add the chicken and cook about three minutes on each side.
On a cutting board, stretch the dough to form the pizza crust, using cornmeal or flour to help you handle it. If you let it rest and warm up for a few minutes, it will handle even more easily. Set the pizza on a pizza pan to the side and clean board.
In a medium skillet over medium heat, melt the butter and stir in Worcestershire sauce, hot sauce and tomato sauce.
Remove the chicken from grill and thinly slice it. Add the chicken to sauce and coat. Cover the pizza dough with the saucy

1 can mushroom soup
1 can cream of chicken soup
2 cans water
2 c. uncooked rice.
Boned, skinned chicken pieces
Salt and pepper, onion, etc.
Mix the soups, rice, seasonings and water in a 9X13 pan. Push chicke pieces into the mixture in a single layer. Bake at 350 for 1 hour or until chicken is done.

2 1/2 to 3 c. flour
Filling - tomato sauce (pizza sauce), meats, cheeses, veggies
In a large bowl, mix all but flour. Stir with wooden spoon till yeast is dissolved. Add 2 cups flour and beat with spoon until smooth. Gradually add rest of flour and stiru until dough forms a ball. Turn out on lightly floured surface and knead until smooth and elastic. Add flour if too sticky. Put in lightly greased bowl and cover with damp towel. Let rise 1 hour or until double. Punch down.
Heat oven to 450. Divide dough into 6 parts. Roll each into 1/4 inch thick round, 6 inches in diameter. With finger, moisten 1/2 inch around each edge with water. Place 23 tablespoons filling on each round, slightly off center. Fold empty side over filling and crimp with fork. Prick holes in top. Bake 15 to 20 minutes or until lightly browned.

In a skillet cook sausage until browned; drain off excess fat. Separate crescent dough into 8 triangles. Place in an ungreased 12 inch pizza pan, points toward the center. Press over bottom and up sides to form a crust; seal perforations. Sppon susage over crust. Sprinkle with potatotes. Top with Cheddar cheese. In a bowl, beat together eggs, milk, salt and pepper. Pour into crust. Sprinkle Parmesan over all. Bake in a 375 oven for 25 to 30 minutes. Makes 6-8 servings.

Vegetable Casserole
Use 2 packages California blend vegetables (cooked - in microwave). Drain. Put vegetables in 9X13 pan. Pour the following sauce over vegetables:

Melt and stir.

1 Tbsp. minced onions
3/4 tsp. sat
Bake at 350 for 15 minutes.

2 (5 oz) jars sharp cheese
2 (8 oz) pkg cream cheese

1 lime
1 small onion
1 bunch fresh cilantro
1 clove garlic, minced

1 T worcestshire sauce

1/2- 3/4 pound spaghetti, broken into thirds
Take a soup pot and heat on medium high. Add olive oil, garlic, bay leaf, onion, and carrots. Saute 5 minutes or until softened. Season with salt and pepper, Then add tomato Sauce, crushed tomatoes, and chicken stock. Cover pot and bring to boil.
Place beef in bowl. Add worcestershire sauce, parsley, egg, bread crumbs, cheese, salt, and pepper. Thoroughly combine with hands, roll the mixture into balls the size of large walnut and drop into soup pot. Stir in broken spaghetti. Cook 7 minutes more. Season with salt and pepper. Top with grated cheese and serve.

8 oz sour cream
1 lb boiled chicken cut up
2 C shredded cheddar cheese

Roll tortilla shells and place in 9 X 13 pan. pour remaining sauce on tortillas and sprinkle with cheese. Cover and bake at 350 degrees for 20 minutes
BBQ Spareribs
1 package boneless spare ribs
1 bottle Honey BBQ sauce
Put ribs in crock pot, pour sauce over ribs. Let simmer over night on low. (this is great in a dutch oven also)

Mix:

2 bottles root beer extract

2 C crushed pretzels (not too fine)
3/4 C margarine
3 T sugar
Press in bottom of 9 X 13 pan. Bake on 400 degrees for 5 minutes. Cool.

1/2 package bacon browned in dutch oven. Mince 1 onion and 2 cloves of garlic. Add to dutch oven. Cook. Fill the dutch oven 2/3 to 3/4 full with potatoes (cubed). Add a can of cream of chicken soup and some of any kind of soda you have around for moisture. Cook until potatoes are tender. ( 30 minutes to an hour) Top with Cheese.

1 6 oz. Orange Juice
1 cup Milk
2 tsp Vanilla

1 cup water
1 cup flour
1 cube butter
4 eggs
Preheat oven to 425. Heat water and butter to rolling boil. Stir in flour overlow heat for 1 minute. Remove from heat and wait until cool to touch. Beat in eggs one at a time until smooth. Spread on cookie sheet. Cook 35 minutes. Let crust cool. Top with 1 small chocolate and 1 small vanilla pudding made and mixed together. Top with cool whip. Drizzle chocolate syrup on top or grate a chocolate bar of choice.

Soak 2 Tablespoons Knox unflavored gelatin (2 envelopes) in 1/2 cup cold water.
Boil 2 cups sugar and 2/3 cup water to the soft ball stage.
Stir in softened gelatin to the syrup and let it stand 1 minute. It will foam as you stir.
Beat 2 egg whites until stiff. Add syrup mixture into egg whites slowly while beating on high with your mixer. Beat about 10 minutes until beater marks disappear in 10 -15 seconds when you turn it off.
Add 1 tsp vanilla flavoring and a few drops of food coloring if you wish.
Spoon out marshmallow into hallow molds. Do not over fill.
Let set 10-20 minutes. Dust tops with flour. Coat with melted chocolate. When dry may draw designs or put names on eggs with frosting or eat plain.

1 cup walnuts (opt.) 2 cups flour
2 tsp. baking soda 1/4 tsp. baking powder
1/2 tsp. salt 2 tsp.ground cloves
1 tsp. ground ginger 4 eggs

16 oz.can pumpkin
Wash jars, allow jars to dry. Once dry, generously grease the inside of each jar with shortening.
Preheat oven to 325 F. Coarsely chop the raisins and walnuts; set aside. Sift together the dry ingredients in a large bowl. Add raisins and nuts; toss lightly to combine. In a separate bowl, beat eggs at high speed until thick and lemon colored, about 3 minutes. Gradually beat in the sugar until thick and light. At low speed, beat in the oil and pumpkin; blend well. Gradually stir in the flour mixture until well blended.
Divide batter among jars (about 3/4 cup). Wipe batter from the rim of the jars. Place jars on a baking sheet, and bake 35-40 minutes or until a pick inserted into the center of each jar comes out clean.
While the cakes are baking, place the lids and rings in a pan of water and bring to a boil. Remove from heat and leave them in the water until the cakes are done. Remove the cakes from the oven one at a time, place the lids and rings on them and tighten. Allow the jars to cool, then check to be sure they have sealed. There should be no movement on the lid. If any have not sealed properly, eat them within a week.

1 cup chopped walnuts 8 straight sided wide mouth pint jars
Wash jars. Boil lids and rings and leave in water until the cakes are done. Preheat oven to 325 F. Dry jars, and when they are room temperature grease the inside with shortening.
In a medium bowl sift together the flour, baking powder, soda, and salt and set aside.
In a large bowl, cream sugars and butter with electric mixer. Add eggs and mix well. Add milk and vanilla and mix well. Add flour mixture and blend with a large spoon. Gently fold in nuts.
Place 3/4 cup of batter into each of the jars. Wipe any batter from rim. Place jars on baking sheet. Bake at 325 F for 50 minutes or until a toothpick inserted into center of cake comes out clean.
Put lids and rings on jars while they are still hot. (Make sure jar rims are clean before sealing)

1 8 oz cream cheese
1 can cream of chicken soup
1/2 C milk

2 Tbsp. oil
1 tsp. sugar
1 tsp. salt
Disolve yeast. Add other ingredients. Mix until moistened. Beat vigorously 20 strokes. Cover and let rest 5 minutes. Press onto greased pizza pan with oiled fingers. Add desired sauce and toppings and bake in 425 oven until crust is browned and cheese is melted - about 10 minutes. Makes 1 (18 inch) or 2 (12 inch) crusts.

Pour hot syrup very slowly in a thin stream into beating egg whites beating constantly on medium speed. Beat on high until stiff peaks form. Add vanilla during last minute of beating (after about 7 minutes).

Add 1 can of cream of chicken or cream of mushroom soup. Stir in 1 can of milk. Add one can of chunked chicken. Stir in 1/2 bag of frozen peas and cheese as you like it. Heat until cheese is melted and it is hot through. Spice as desired. Enjoy!

Mix all ingredients together in a large bowl just before serving. I usually add around 2 cups of mini marshmallows - it's kind of up to you.
Mandarin Orange Salad
1 carton Cool Whip
1 can Mandarin oranges
1 carton cottage cheese
1 box Orange J-ello
Instructions:
Mix together J-ello, whipped cream, and cottage cheese. Mix in most of the can of oranges just before serving. Use remaining oranges to make a decorative top to the salad. Enjoy!
