1/2 c. sugar
1 tsp. vanilla
2 egg whites
1/4 c. white corn syrup
2 Tbsp water
Combine sugar, corn syrup and water in small saucepan. Cover. Heat to rolling boil over medium heat. Remove cover and boil rapidly without stirring to 240 F or until small amount dropped into cold water forms into a firm ball. As mixture boils, beat egg whites until stiff peaks form. Pour hot syrup very slowly in a thin stream into beating egg whites beating constantly on medium speed. Beat on high until stiff peaks form. Add vanilla during last minute of beating (after about 7 minutes).
This is the frosting that used to top almost every birthday cake we ever had - cake decorated like tic-tac-toe, or ??? :) Good memories!
