Grandma's Yeast Rolls

2 c. scalded milk
3 Tbsp. sugar
2 tsp. salt
1/2 tsp. ground ginger
1 egg
3 Tbsp. melted butter
1 Tbsp. dry yeast
Flour

Into a large bowl of the electric mixer, put the egg, sugar, salt, ginger, melted butter, 1/2 of the milk cooled to lukewarm and the yeast which has been softened in 1/2 c. lukewarm water, 1 Tbsp. sugar and 1 Tbsp. dry yeast.  Let rise.  Beat on low to combine.  Add 4 Tbsp. flour.  Beat to smooth cream.  Ad remainder of milk and beat 2 minutes.  Add flour slowly until dough is just stiff enough to handle.  Let rise until light.  Mix down by hand.  Let rise again and then roll out to 1/3 inch thick and shape into rolls.  Let rise again.  Bake at 400 for 20 minutes.  Butter tops and put on rack to cool.
