Salsa Chicken

1 C. salsa
1/4 C. water
2 cloves garlic, minced
1 T. olive oil
4 boneless skinless chicken breasts
salt and pepper

Combine salsa and water in small bowl and set aside.  In large skillet, saute garlic in olive oil over medium heat for 1-2 minutes.  Add chicken breasts and cook on each side for 5 minutes.  Add salsa mixture, salt, and pepper to the skillet.  Turn to medium-low heat and cover.  Simmer for 20 minutes until chicken is tender.  I use only one garlic clove and cut my chicken into strips about the size of chicken tenders so they take in more of the salsa taste.
